I am not doing on-line training yet. But I would imagine you could have people buy a certain amount of on-line sessions or charge them a flat fee for program design, and then another fee for X number of e-mails, chats, or contacts.

Program Design - $50
10 E-mail/Chat Coaching Sessions - $50


And if you're going to make videos for you site, make sure you read this article from the Washignton Post first! (My friend Les Romack is the yoga instructor spotlighted, although he was not too pleased about what the "experts" said about his video)

Well, I can't say much about Les' yoga moves since I don't know a lot about yoga, but I DO know a nicely decorated breakfast nook when I see one! The black frame looks great against that red wall! LOL!!! Laughing I think I will make some YouTube videos for my site eventually. (Gotta get my site up and running first.)

In Fitness Generator's FAQ they say this:
QUESTION: How much should I charge my clients?
ANSWER: It varies depending on length of program, target market, etc. As a general rule of thumb, most trainers setup a monthly fee and charge their per hour rate for the month. For example, if you charge $80 an hour for in-person training, you would charge $80 a month for online training. You can handle many more online clients than you can in-person clients.

Of course this is just one source. By the way, I am not too happy with those guys. Maybe other people have had a better experience but when I signed up for a free 30 day trial not only did my login not work but after exchanging a few emails with the woman who works there --she said she would resolve the issue--I didn't ever hear back. Very odd. I had already emailed them 3 times and wasn't going to email them anymore. Then of course I got an email newsletter asking me how my 30 day trial offer was going! Perhaps others have had better luck. I am going to just buy BSDI software and email my clients their programs instead of going the other route.
